How to make these amazing Paneer Tacos with Asian Slaw:
Makes 4+ Tacos
For the Mango Paneer
300g Paneer cubed
1 red pepper (capsicum) diced,
1 green pepper (capsicum) diced
2 tbs ginger and garlic paste
1 tsp chilli powder
2 tbs mango chutney
2 tsp black pepper
½ tsp ground turmeric
2 tbs tomato puree
2 tsp soy sauce
3 tbs sunflower oil
4-6 ready made corn tacos shells
2 tbs fresh coriander, chopped for garnishing
For the Asian Slaw
3 carrots, grated
¼ red cabbage, finely shredded
1 red onion, finely sliced
4 tbs Greek yoghurt
1 lime juiced
1 red chilli, de-seeded and finely sliced
½ tsp cumin seeds
10g fresh coriander, chopped
1 tbs raisins
Salt
How to make Mango Paneer
Step 1
Heat the oven to 1800C
Step 2
Mix all the ingredients in a bowl and decant into a deep baking tray and cook for 25 – 30 minutes until jammy and caramelised. Agitate all the ingredients half way through cooking.
Step 3
Evenly divide the mango paneer between the taco shells and flutter with coriander.
Serve with Indian Slaw.
How to make Indian Slaw
Step 1
Mix all the ingredients thoroughly and serve as a side to the Mango Paneer Tacos.
