For the Chicken and Waffles, you will need:
300g skinless chicken thigh fillets, diced into 3cm cubes
1 tbs ginger and garlic paste
½ lime juiced
½ tsp salt
2 tbs fresh curry leaves, chopped (or dried and rehydrated curry leaves)
1 tsp turmeric
1 tsp chilli powder
1 tsp smoked paprika
1 tsp garam masala
1 tsp crushed black pepper
4 tbs cornflour
2 eggs, beaten in a bowl
Vegetable oil for frying.
4 Large waffles
Icing sugar for dusting
1 tbs pomegranate seeds
1 tbs coriander leaves, finely chopped
Chilli hot honey
This is how to make Chicken and Waffles:
Step 1
Use three mixing bowls.
Bowl 1 = Chicken, mixed with the ginger and garlic paste, lime and salt. Mix thoroughly.
Bowl 2 = Beaten eggs.
Bowl 3 = Mix the cornflour, curry leaves, turmeric, chilli powder, paprika, garam masala and black pepper.
Step 2
Dip the chicken pieces in the egg, then coat in the bowl with the cornflour, thoroughly coating all the pieces in the spiced mix.
Step 3
Using a fryer or deep pan heat the oil to 170oC and cook the chicken pieces for 3 minutes until golden brown and cooked throughout. Remove and drain on kitchen paper.
Step 4
Using a dry frying pan, heat the waffles over a medium heat on both sides for a minute until warm and crispy.
Step 5
Dust the waffles with icing sugar, divide the fried chicken and layer over the waffles, sprinkle the pomegranate seeds and coriander over the top and drizzle with the chilli hot honey. Devour.
