Street Corn Chaat
Textured charred sweetcorn chaat, dusted in a smoky hot cayenne pepper. Crispy, fresh and sharp citrus flavours make this chaat salad the definition of love at first bite.
Makes around 4 portions
- 2 tbs rapeseed oil
- 2 tsp cumin seeds
- 2 x cans of sweetcorn (340g)
- 1 tsp ground black pepper
- ½ tsp cayenne pepper
- ½ tsp salt
- 2 tbs lime juice
- 2 tsp chaat masala
- ½ red onion, finely sliced
- 1 tbs coriander leaves, finely chopped
- 1 tsp black onion seeds
- 2 tsp bombay mix scattered over the top

How To Make Street Corn Chaat
- Use a large frying pan and over a medium heat add the oil and after a minute add the cumin seeds and scent the oil for a minute or so.
- Add the corn and cook for around 8 minutes until the edges start to blacken and char…don’t be tempted to stir too often. Now add the black pepper, cayenne pepper, salt, lime juice and chaat masala…allow everything to sizzle, then mix the ingredients thoroughly.
- Decant into a bowl, and mix through with the red onion and coriander. Dust with the black onion seeds and scatter the Bombay mix over the top for added crunch.
