UK's First Buroti

Urban Rajah partners with Thali Cafe to take a bite out of the streetfood market with his all new Indian Buroti as part of his Indian Street Kitchen. As Urban Rajah explains, “Indian food is the best loved cuisine in the UK and Brits spend around £3.2bn every year on the category. With the increasing popularity of streetfood it’s time Indian food evolved to meet the needs of spice hungry foodies with a quick, convenient, mouth-watering offer. The Buroti is the latest taste of India in a roti style wrap and dead easy to eat on the go.”

The food writer and pop up restaurateur has been working with the Thali Cafe team over the past year as a guest chef, delivering seasonal menus, supper clubs and events. Jim Pizer, MD for Thali Cafe adds, “Innovation is always on the menu for our Thali Cafe customers and given our partnership with Urban Rajah it made sense to launch his Buroti and Indian Street Kitchen as a pop up residency across some of our restaurants as an eat in or take-out concept together with Deliveroo.”

Burotis are Indian roti style wraps jam packed with tender hand marinated regional Indian recipes involving chicken, lamb or roasted paneer filled with fragrant basmati rice and zesty kachumber Indian salad then pimped with a choice of chutneys.

Urban Rajah’s Indian Street Kitchen residency (from 9th January to 10th April) will occupy four Thali Cafe restaurants across Bristol. Launching in Southville Thali on Saturday 09 January and rolling-out to Clifton, Easton and Montpelier on Wednesday 13 January. Alongside the succulent Burotis, the menu will also feature addictive spiced snacks including chaat masala fries, vegetable pakoras and spice singed chickpeas known as channa chaat (see menu below).

Urban Rajah continues, “Brits love sarnies and quality take-out and the numbers stack up…we chomp our way through 3.5bn sandwiches a year (worth £7.25bn) and spend nearly £30bn on grab n go food. Urban Rajah is bringing a bit of ethnic confusion to the market with spiced Burotis using scrummy regional Indian cuisine in an accessible format. ”
