Kala Til Fried Onions
Crunchy, sweet and savoury all in the same mouthful, our black sesame onion rings are a textured treat and definitely not to be shared.
Serves 4 portions
- 3 White onions, cut into thick rounds, rings separated
- 1 Thumb of ginger, peeled and grated
- 2 Garlic cloves, minced
- 10 Curry leaves, chopped
- 2 Finger green chillies
- 65g plain flour
- 30g gram flour
- 2 tbs corn flour
- 1 tsp baking soda
- 2 tsp black sesame seeds
- Salt, to taste
- Vegetable oil, for frying

How To Make Black Sesame Onion Rings
- Blend the ginger, garlic, green chillies and curry leaves with a tablespoon of water into a coarse paste. Set the spice paste aside.
- Heat the oil for the onion rings over medium heat.
- Sift the flours and baking soda along with the black sesame seeds (kala til), salt and spice paste.
- Whisk everything gently and incrementally add water to create a thick batter. The batter should be a gloopy dropping consistency so it sticks to the onion rings.
- Drop in a few thick onion rings into the batter and coat thoroughly. Transfer them into the hot oil, fry until golden and crisp.
- Remove and drain on kitchen paper towel.
Serve hot with Curry Leaf Raitha.
