LisGoan Tikki Croquette

Talk to anyone from Lisbon and ask them what the most popular snack is? The answer is likely to include their favourite croquette, which is why I’ve created this Tikki croquette, it takes its inspiration from Lisbon and finds its’ form in Goa with the help of cumin and garam masala, it’s my vegan LisGoan Tikki Croquette Don’t stop at one.

Makes 18 – 20 croquettes

  • 500g veggie mince
  • 1 tbs vinegar
  • 1 tsp salt
  • 2 tsp ginger garlic paste
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 1 tsp garam masala powder
  • 2 medium sized onions, finely chopped
  • 3 tbs oil

To Shape the Croquettes

  • 1 egg
  • 4 tbs coriander, finely chopped
  • 1 green chilli, finely chopped
  • 120g breadcrumbs

To Fry The Croquettes

  • 2 eggs
  • fine semolina
  • Oil (to deep fry)

How To Make LisGoan Tikkis

  1. In a deep skillet, add the oil. Fry the onions until soft and add the ginger garlic paste, mince, salt, vinegar, turmeric powder. Mix thoroughly.
  2. After 5 minutes, add chilli powder and cumin powder. Cook until the mince is done. Add the garam masala powder and cook for another couple of minutes until the moisture has evaporated and the mince is dry. Allow to cool completely.
  3. Grind the mixture in a blender with a coarse setting, then pop in a bowl.
  4. Add one egg, the breadcrumbs, green chilli, and coriander leaves. Mix well and adjust the seasoning levels if required.
  5. Shape into croquettes. Dip the croquettes in the beaten eggs, then roll each one the semolina ensuring a good covering. Repeat until all the mix has been used entirely.
  6. Deep fry them in the oil (approx. 160C) for a couple of minutes until golden brown. Serve with a chutney of choice.
