- 1 tbs tomato puree
- 1 tsp salt (or to taste)
- 1 tsp sugar
- 2 finger green chillies, chopped
- ¼ tsp ground turmeric
- 250g fresh spinach leaves
- 4 medium eggs at room temperature
- Ground black pepper
- Handful of fresh coriander or flat leaf parsley, chopped
- Big dollop of Greek yoghurt
