How does one commemorate a nation's National Day? With a feast of course..at least that's how the team behind the Guardian's culinary pages roll. We thought it was time celebrate Wales' favourite Saint, David (Dewi) with a spiced theme. This quickfire recipe published in the Guardian's Cook section is a blend – a kind of East meets Welsh. Applying some Eastern zing to the symbol of Welsh pride, the leek – it's supremely healthy, packing in spices, peppers and leeks bursting with flavour into a colourful lip-smacking dish.

It'll leave you uttering the words, "now there's lovely..."
