Chilli Lime Sweetcorn

Pause before tucking in and suck in the sweet citrus and juicy aroma of sweet Chilli Lime Sweetcorn cobs, blistered over flames and tamed with a honey caress.

Serves 4 as a side

  • 6 tbs salted butter, softened to room temperature
  • 1 tbs lime juice
  • 1 lime zested
  • 2 tsp honey
  • 1 tsp chilli powder
  • 4 cobs of sweetcorn, split into 2 portions each
  • 1 tsp chaat masala and lime wedges for serving
  1. In a bowl add the butter, lime juice, zest, honey and chilli powder then mash with a fork until well combined. Refrigerate until ready to use.
  2. Preheat a grill to medium-high then add the sweet corn and grill, rotating occasionally, until evenly cooked. Spread while hot with the chilli lime butter then sprinkle with chaat masala and lime wedges for drizzling.
